Avoiding Failure

First, know your limitations. If you can slow-roast a rack of lamb perfectly every time, go ahead. But most men (and women) will come up short unless they play it safe.

Second, work on the presentation: Clean your kitchen. Dim the lights. Set the table with one candle, and clean plates and cutlery. Have your ingredients ready, and have the wine uncorked.

Third, let her watch and get buzzed while you work your magic. There are few things cooler than a guy who knows his way around a chopping board.
