When we make the beer butt chicken we but 1/3 lb. Jimmy Dean hot sausage inside and 1/4 onion in the neck. We usually make 6 to 8 at a time and we cook them in the gas smoker for about 6 hours. we usually use pecan wood and we put frozen apple juice in the water pan with the water.To test for doneness,twist the leg and if it comes off easily, it is ready to eat.
